As a self-taught baker who started with creating extravagant cakes Tam entered the world of confections through participating on The Food Network’s Great Chocolate Showdown. 

"My idea of soft brittle came from the realization that peanut brittle doesn’t have to be hard. Bringing a twist to the classic brittle by adding a nut butter creates a flakey crunchy texture that’s easy on your teeth. Creating my soft brittle by hand in small batches is a labor of love and the result is a truly memorable experience."
