65 HRC hardness carbon steel, their proprietary heat treatment and Cryo process produces a fine grained wear-resistant blade with exceptional sharpness and hardness that won't become brittle.

It has a 2" blade at handle and a full tang construct for the perfect balance and added strength.

The handle is made from locally sourced Oregon Big Leaf Maple Burl, then stabilized with resin to meet kitchen requirements and to prevent shrinking or swelling.
